Eddie's Fried Catfish.
3 pounds of fillet Catfish, skin removed. 2 cups of white vinegar. 1 spoon of Black Pepper. Vegetable Oil. 1 cup of all purpose flour. Sason original seasoning. Powder garlic, powder onions and salt, season to taste.
Take a shallow bowel and mix together the black pepper, white vinegar and 1/4 a cup of Vegetable oil. Put the filleted catfish in this mixture, make sure the mixture covers the fish completely and let it sit in the bottom of your refrigerator for 2 to 3 hours to cure.
Take a large frying pan and fill it 1/3 of vegetable oil, heat at a medium high heat.
Mix the Sason, powder garlic, powder onions and salt with the white flour in a shallow plate to your taste.
Then coat the fish in the white flour mixture, place them in the hot oil in the frying pan and fry until golden brown. Let the oil drain on a plate covered with paper towels and serve.
